If deep frying without a thermometer, use cubes of bread to test your oil.

Take a small cube of white bread with the crust removed, and drop it into your oil. If it just sits there, the oil is too cold; if the oil bubbles furiously and the bread turns color immediately, it's too hot. If the bread sizzles and fine bubbles appear on the bottom, your oil is in the 325-375 degree range, the perfect temp for most deep-frying.
