Mashed yams can be a less sugary substitute for candied yams at Thanksgiving.
Bake the yam (microwave or oven) until soft. Scoop the flesh out of the skin and place in a mixing bowl. Add a teaspoon each of nutmeg, cinnamon and vanilla per yam and mash with a potato masher. If dry, use olive oil, almond milk, soy milk or orange juice to loosen. Sprinkle with chopped pecans if desired.
